Pimm's Cup Cocktail

I went to a party several years ago and a guest brought this delicious drink.  I desperately wanted the recipe, but she said it was a classic English mixed drink and this liqueur couldn't be purchased in the United States.  To my delight, I found it almost a year later at Spec's Liquor store in Houston!

I Googled a bunch of recipes online and most seemed to be very similar.  You can use lemonade, ginger ale, or lemon flavored soda, and you can change up your fruits as well.  The grocery store closest to my house didn't have lemons, so I made do with limes instead (thanks, Wal-Mart).  Use cucumber, oranges, and lemons, and you can also add sliced strawberries if desired.

This is such a beautiful, summery drink.  I love cocktails with fruit (hence my sangria affair) and this one isn't too strong or too sweet.

Pimm's Cup Cocktail

1 bottle Pimm's No 1 liqueur
4 cans of Sprite or 7-Up
2 oranges, sliced thin
2 limes or lemons, sliced thin
1 cucumber, sliced thin

In a tall glass pitcher, layer crushed ice, limes, oranges, then cucumbers.  Repeat layers until pitcher is 3/4 full.  In a separate pitcher, combine Pimm's and Sprite.  Pour over ice in pitcher and serve in glasses garnished with remaining fruit and cucumber slices.
