Campfire Caramel Chocolate Bananas


We went camping in the Smokey Mountains when we first made a recipe similar to this one.  We used chocolate chips and mini marshmallows, and it was divine!  When the banana cooks, it releases its natural sugars and turns into a sweet, tasty dessert.

We didn't have marshmallows when we spontaneously decided to make this again.  We had made a fire in our fire pit on our backyard to mourn the passing of winter and were looking for fun things to cook on it.  We put some crab legs in a grill basket and cooked them, and we decided to make these bananas for dessert.  We didn't have any marshmallows because a few weeks ago we tried toasting mini marshmallows on a stick over a fire.  Not quite the same as jumbo marshmallows.  I don't recommend it.

So I rifled through my baking shelf and came up with mini chocolate chips and caramel squares.  Perfect!

First you cut a canoe into your banana.  Take a sharp knife and make a U shape in the peel.  Peel it back and use a spoon to carve out a little boat.


Next, enlist some helpers to unwrap your caramels.


Sprinkle your mini chocolate chips into your canoe, then place halved caramels on top.


Seal it up with the peel on top,


Wrap very well with foil and squeeze to tighten.


Place in the coals of your campfire or fire pit.


After about 10-15 minutes, remove from fire and carefully unwrap.  At this point, it may look gross.


Take your spoons and scoop out the inside.  Get some banana and some caramel chocolatey goodness with each bite.


Be careful, it will be very HOT!



Campfire Caramel Chocolate Bananas

2 bananas
4 Tbsp mini chocolate chips
4 unwrapped caramel squares, halved

Carve peel of each banana into U shape, leaving the top of the U attached.  With a spoon, carve out enough banana to place your fillings.  Sprinkle 2 Tbsp mini chocolate chips in each banana.  Place 4 halves of caramels on top of each, then place peel back on top.  Wrap tightly and very well with foil.  Place in campfire or fire pit for 10 - 15 minutes.  Remove and carefully unwrap.  Remove flap of peel, and enjoy!

  1. Just discovered your blog over the weekend! These are super yummy. We've made the chocolate chip and marshmallow variety but may try the caramels next time Greg lights up the fire pit. We always have bananas on hand for Eli's breakfast.

    1. Thanks for reading! I loooove the marshmallow kind! Next I want to try all 3: marshmallow, chocolate chips, and caramel. At what point do you have to scrape out so much banana to fit all the unhealthy goodies that it becomes a sugar-stuffed banana peel?
