Apple Tarts

I'm totally infatuated with Puff Pastry sheets.  I think you could put anything in them at all, slather them in butter and egg, and they'd be super yummy.  As far as my favorite desserts go, it's a tie between anything chocolate or apple.  Apple dumplings, apple crisp, apple pie, apple cheesecake, apple kabobs, apple creole, apple gumbo...

I peeled and cored 2 Granny Smith apples, then sliced them very thin so they'd cook in a short amount of time.  Don't want to burn that puff pastry!  I sprinkled lemon juice into the bowl, about 3 tablespoons, and added 1 teaspoon cinnamon, 1 teaspoon pumpkin pie spice, and 2 spoonfuls of brown sugar.  Stir until apple slices are separated and coated well.

I thawed both pastries in the package, then cut each one in 4 pieces.  Place apples diagonally down the middle of each one and top with whatever you want!

I made a caramel sauce by microwaving 4 square caramels and 1 tablespoon cream, and I drizzled the sauce over the apples and topped with chopped walnuts.

I also made one with a large chunk of Brie (pictured above), and made another with Brie and chopped walnuts (see 1st picture at top).

I made one with drizzled honey, another with butter and more brown sugar, and added nuts to some and not to others.  What I was left with was a variety of 8 different, totally delicious Apple Tarts!  I had so much fun making these, and even more fun eating them.  I won't say how many I had, but I'm already craving more.

Apple Tarts

1 package frozen Puff Pastry sheets, thawed
2 Granny Smith apples, peeled, cored and sliced thin
1 tsp pumpkin pie spice
1 tsp cinnamon
3 Tbsp lemon juice
2 spoonfuls brown sugar
Chopped walnuts
Honey
Butter
Brie
Egg

Caramel sauce:
4 square caramels, unwrapped
1 Tbsp heavy cream

Take pastry sheets out to thaw.  Combine next 5 ingredients in a bowl.  Cut each pastry sheet into 4 squares with a pizza cutter or sharp knife.  Line apple slices diagonally across each square.  Top with desired toppings, then fold corners over like a blanket.  Break egg into a small bowl and whisk gently, then baste each tart with egg.

Bake at 350 for 15 minutes on a cookie sheet lined with parchment paper, or stoneware--I used both.  Let them cool slightly, and serve warm!
