Skillet Chicken and BBQ with mesquite smoked bacon

I love cooking, but not on Sunday nights. That's when I want to order a pizza and watch a movie on the couch with my husband and kids. Sundays are for remembering how much you'll miss your family when you head off to work Monday morning. Tonight I wasn't in a "pizza place" but I didn't want to waste time going to the store. So I scrounged around the freezer and fridge and came up with this chicken, BBQ, cheese and bacon masterpiece.
Okay, "masterpiece" could be an over-statement, but considering that I spent no extra money and had everything here in my pantry, I feel pretty good about it.
Skillet Chicken and BBQ with mesquite smoked bacon
1lb thinly sliced chicken breasts
1 onion, finely diced
BBQ sauce
6-8 mozzarella cheese slices
Mesquite smoked bacon
salt & pepper
Finely dice onion and saute in butter until soft. Set aside.
Cook bacon in skillet and set aside, leaving grease in pan. Salt and pepper both sides of chicken and immediately place in hot skillet.

Cook until edges start to turn white, then flip. Place a spoonful of diced onions down the center of each breast. Drop a spoonful of BBQ sauce on the onions.

Place a slice of cheese on each, then top with bacon. Turn heat down to low and cover skillet with lid. After cheese is melted, uncover and serve.
