"Better Than Sex" Chex Mix

Better than sex?  Someone's getting a little carried away if you ask me.  But hey, I didn't invent the name.  I just copied it!  And if it grabbed your attention and made you even a little bit Herbal Essences curious about this snack, then it worked!

This is the perfect make-ahead snack for bringing to a party.  I made it tonight for a friend's pool party tomorrow.  I know, chocolate in the sun probably isn't the best idea, but I'm hoping people will snarf it down before it gets too melty.  

I'm always on the prowl for a tasty dessert recipe that isn't too over-the-top.  I love to go elaborate on cakes and cupcakes, but you never know what else your hostess has planned so something under-stated seems like a safer choice, especially because this party tomorrow is a group of friends who are new to us.  I thought this would be the perfect sweet treat for gorging myself in a swimsuit in front of a bunch of strangers.  

Because if we can't become besties over our food-baby bellies, then this relationship is never going to go anywhere.

"Better Than Sex" Chex Mix

1 box Chocolate Chex Mix cereal
6 Tbsp butter
3/4 cup brown sugar
3 Tbsp light corn syrup
1/4 tsp baking soda
8oz bag mini Reeses Peanut Butter Cups
1 cup mini marshmallows
1/2 cup Caramel bits
1 Tbsp heavy cream
1/2 cup milk chocolate chips
1/2 cup white chocolate chips
sea or coarse salt

Pour cereal into a large, microwave-safe bowl and set aside.  Line large cookie sheet with wax paper.

In a glass bowl or 2-cup measuring cup, microwave butter, brown sugar and corn syrup for 1 minute.  Stir well, the microwave for 1 more minute, watching closely to avoid overflow (my bad!)

Carefully remove hot mixture from microwave and stir in baking soda.  Pour slowly over Chex cereal, stirring frequently with a spatula.  It will be hard to completely combine it all at this point.  Microwave cereal bowl for 3 minutes, pausing every minute to stir with spatula.  At the end of 3 minutes your cereal should be well-coated.  Pour cereal onto cookie sheet and spread apart to cool for 10 minutes.  When cool, break it apart in medium-sized chunks.

Evenly spread mini Reeses cups and marshmallows over Chex mixture.

In a glass measuring cup or bowl, microwave caramel bits and cream for 30 seconds, stir, and microwave for another 30 seconds until melted.  Drizzle evenly over Chex mixture.

In the same bowl (conserve dirty dishes!) microwave milk chocolate for 20 seconds at a time, stirring between, until melted.  Dip a knife or fork into melted chocolate and drizzle or fling it onto the Chex mix with wild abandon.

Melt white chocolate the same way, and fling with equal abandon.  My white chocolate didn't melt as well, so I had some issues with burning in my first batch, and my 2nd batch wasn't as "flingy" as my chocolate was.  It was more "globby" but it still worked.

While chocolate is still wet, sprinkle salt over the top. Refrigerate until set, then break apart into chunks and serve!

    1. Thanks, it was a big hit at the party! I gave some to my mom and told her that I've been calling it "Sex Mix" for short. lol
