I found this recipe on Pinterest awhile back, and this was the perfect last-minute dip for an unplanned Memorial Day Weekend get together. I love to be prepared, and this recipe has almost all of my pantry staples!
Cream cheese keeps in the fridge for months so I always have a few blocks, and I have large bags of every kind of grated cheese in my freezer at all times. Canned goods are a must-have and don't ever expire in this house, so the Rotel is an easy pantry staple. The pork sausage was something I did have to purchase, but I bought 2 rolls and now I have one in the freezer.
I will admit, it isn't healthy. Seriously, live a little. Don't belly up to the coffee table as you sit on the couch with a bag of chips and the entire 8x8 pan while you catch up on The Client List. That would be an unwise eating choice. But make this for a group of people and you can enjoy it in moderation with no guilt!

Hot Sausage Dip
1 roll of Jimmy Dean's hot pork sausage
1 block cream cheese, softened
1 can Rotel, hot
1/2 cup Cheddar cheese, grated
tortilla chips for serving
In a skillet, brown the pork sausage. There wasn't much grease at all, so I didn't drain mine. Turn off the heat, but while the pan is still hot add the cream cheese and stir until combined. Add the entire can of Rotel, do not drain. Stir to combine.
Lightly spray a square baking dish with cooking spray. Spoon sausage mixture into pan and sprinkle cheese over top. Bake in the oven at 350 for 20-25 minutes until hot and bubbly. Serve with tortilla chips.
